I produce cheese from my goats' milk. First there is fresh cheese, sold the day after it is made, then it becomes semi-dry after a week in the dryer and can be matured for up to 1 to 2 months. I also make tomme from heated, curdled and drained milk which must then be left in a temperate and slightly ventilated room for a month. You can also simply curdle the milk to produce faisselle. There is a drained version that is commonly called chique in the countryside: it is eaten mixed with garlic, shallots, spices, but also in a sweet version for dessert, with jams or fruit.
When did you start?
January 1, 2016! Before, I was in personal services in Vagney. A friend had goats and, as I wanted to quit my job, he told me: "you just have to go for it, I'll give you 2-3 goats!" At first I didn't really know, I made a little cheese for them, I didn't think I would one day make a career out of it. Then it happened little by little, day by day.
What do you like most about this job?
I love my goats! Otherwise, in the profession, I like to do everything, from start to finish, until the sale of the cheeses. What is interesting is to raise, produce, transform and sell. That is why I only have thirty goats, no more, because beyond that I would have to do things differently.
What is your favorite cheese? How do you eat it?
Matured and semi-dry: I like goat cheese that has flavor.
When I started, I made a lot of hot goat cheese, in the oven it's excellent. With the chique, I also make white cheese tart. It's a bit like a soufflé, it's... mmmmh!

A motivation? My project of a cottage on the farm, people would be quiet and could come and see the goats
A place in the Secret Vosges? Our piece of land that we called Paradise, with the little Lévaugoutte stream where I love to go with my goats
