Roland Balandier and his daughter Agathe have a plantation of 2000 blueberry plants in Organic Farming. This is a variety of blueberries of Canadian origin which was planted in the Vosges in the 70s. It is a larger fruit than the blueberry, the flesh is white, a little softer and sweeter, with the same virtues. They grow the fruit in the summer, in July and August, with the help of seasonal workers, particularly local young people. 70% of production is sold as fresh fruit because it is a very popular food product in our region but also elsewhere. You can find their blueberries everywhere in France! For the other 30 percent, they transform them into a wide range of products: more or less sweet jams, vinegars, syrups, juices, fruit pastes, sorbets during the summer but also aperitifs and liqueurs. Everything is grown, packaged and processed on site.
How did you start?
Agathe : The plantation dates from 1987, it was my parents who planted it and who immediately went into organic farming. It was a sole proprietorship at the beginning, then I set up in 2018 with my father. So today we are GAEC Balandier Bluets, made up of two partners, my father and myself.
We have truly had a family operation since its creation.
What do you like most about this job?
Agathe : I don't know if there's something we don't like...! For my part, I like being on the plantation, in nature with the singing of birds. What's interesting is also doing everything from A to Z: growing, maintaining and marketing your own product. I'm not sure I could be a salesperson in anything other than what I do.
Roland : We also like contact, going to salons, receiving the public. For example, during the Girmont night markets, there is always a crowd around the stand and that is something that we really appreciate. And then, it takes us out of the farm, because otherwise we would become bears!
Do you have a recipe idea based on your products?
Roland : We have sweet and sour blueberries with which we can concoct good little dishes, in a sweet and savory style. It goes very well with scallops, game and especially duck breast. So I brown my duck breast, to which I add a spoonful of neutral honey, like acacia. I let it caramelize then I deglaze the sweet and sour blueberries with the vinegar, which really brings blueberry aromas to the dish. At the end of cooking, I add some slightly warmed sweet and sour blueberries and it's ready!
Agathe : We work with a lot of local restaurateurs who offer good recipes. They like our products because they make desserts that are easy to make and very popular.
On-site sales in season (July 1 to August 15), Monday to Thursday from 9 a.m. to 12 p.m. and 14 p.m. to 18 p.m. and Friday from 9 a.m. to 12 p.m.
