This Friday, May 17, we celebrate International Pastry Day! In Remiremont, two pastry specialties are essential for any lover of delicacies: nonnettes and loriquettes. At the head of Pâtisserie Jean-Luc, created by her father, and the eponymous tea room, Marie-Christine Valentin, accompanied by her team, offers for sale and tasting these specialties inherited from the time of the canonesses.
What do you produce at Pâtisserie Jean-Luc?
If we only talk about specialties, we offer nonnette and loriquette in our pastry shop, two typical cakes from Remiremont!
Nonnette is an old-fashioned gingerbread, filled with blueberry, mirabelle plum or raspberry jam. As for the lorikeet, it is a travel cake inherited from the time of the canonesses. It is a soft treat with raw almonds, honey and orange.
We also produce the famous Glace Plombières, with its candied fruits macerated in Kirsch, which can be enjoyed in our tea room.
How long have you been doing this activity? What made you want to do this?
I started in 1970. It was my dad, Jean-Luc, who created the pastry business, so I was born into it in fact. And then I have always loved pastries, candies, chocolates, cakes… So it was obvious!
How do you produce all your pastries?
Everything is homemade of course! We make everything at home, from A to Z. For example, for the nonnettes, we also make the jams ourselves.
Nonnettes and lorikeets are essential in your store, but what is your favorite product?
For me it's chocolate, without any hesitation! Rather dark chocolate, with at least 70% cocoa. I also love chocolate with almonds, hazelnuts, walnuts… In short, anything that is dried fruit!
And caramel is my second favorite peach tree.
